6-8 Medium Potatoes (baked in the oven or microwave)
1 cup melted butter
1 large onion (diced)
1 can of cream of chicken
16 oz sour cream
1-2 cups shredded cheddar cheese (I use 2 cups because I love cheese, but it is still wonderful with one cup)
After potatoes are baked and cooled, peel of the skin and shed them into a large bowl. Once they are all shredded, in another bowl combine: onion, cream of chicken, sourcream, and cheese. Then pour melted butter over the shedded potatoes. Fold in the onion mixture and then place in greased 13X9 baking dish. Bake at 350 for 30 minutes uncovered.
So yummy!

yum. I have a variant of this recipe that's basically butter, sour cream, and cheese with a few potatoes in it. It's one of my alltime favorites. But the onion makes your recipe sound DIVINE! I shall have to try it out. I've been learning to cook more and more and I love it!

do you know what these are called at my house? "Darla Potatoes" because my mom had a roomate in college named Darla who would make them all the time!

I know them as Holiday Potatoes and/or Funeral Potatoes. They are still quite yummy though!
