Vegetarian Adventures....


I must say that I am pretty proud of myself. After two weeks I have managed to make 5 completely vegie meals! The first day was the break down day that ended in pepperoni pizza and crying, but then I made that squash soup - tasty but not a main course. After all of your wonderful suggestions I was able to make 4 more tasty meals.
  1. Twice Baked Sweet Potatoes with Ricotta Cheese - served with a salad and definitely a keeper
  2. Chimichangas with Fresh Tomato Salsa - Ryan would have liked them to have a little cheese and perhaps I should have made something on the side...very quick to make and super flavorful.
  3. Homemade pizza with ricotta cheese, asparagus, spinach and sun dried tomatoes - amazing
  4. Chickpea Curry and Brown Rice (Cholay)- This was truly tasty. I added some Graham Masala to give it a little more flavor. I also added chopped acorn squash. Ryan and I loved it and I am looking forward to lunch leftovers tomorrow.
We will see how long I keep up this vegetarian cooking. So far it has been an adventure and I am going to stick with it...for now.

YUM! I love veggie meals. I love being able to eat a ton and know it's healthy..as long as there isn't too much cheese! Way to go, Juls!

Good job on going veggie! I love that you are blogging about it. Keep sharing your favorite recipes, I want to try them. I made my veggie stir fry last night, we have it about once a week it is so good. Carrots, celery, broccoli, mung beans, snow peas, almonds and sesame seeds. I use chicken broth when I need to add moisture and lots of sesame oil and crushed ginger and garlic. Then of course serve it over that yummy jasmin rice. Good luck and keep it up!
