As discussed in my earlier post...I am trying to cook and care for my family. Well, the night I planned that amazing soup...I came home exhausted and ended up crying for two hours and talking to friends. One brought over a pizza and that is what happen.
Last night, however, I was able to make that soup and it was oh so yummy, unfortunately that was all I made so Ryan and I went to bed a little hungry. I am happy to report that Ryan came home with a fresh loaf of sour dough to go with the soup. Tonight it is stuffed yams and salad. It has only been 3 day this week and I am already at a loss for FILLING vegetarian meals. I am wondering if I can really do this....Tips welcome!

Filling Vegetarian.... We eat vegetarian at least 5 nights a week, sometimes more. I'll do some thinking and see if I can give you any worthwhile tips.
In the meantime, one of the easiest things to try is to find your favorite meals and discover new ways to eat them without the meat. Tacos with pintos rather than beef, things like that. Bean dishes are very filling. We've noticed a HUGE change in our health and our children's behavior since cutting out a lot of the meat we used to eat. I applaud your efforts. :)
Another option we enjoy earlier in the day are green smoothies. The kids love them, and we get more greens in our diet. They look scary but taste really good. If you start Barec on them early, he'll never want bottled juice!
Check out Vegetarian Times, it's a great mag and website. Also, Heidi Swanson is one of my favorite veggie resources - check out her books Cook 1.0 and Super Natural Cooking. You won't regret it! Filling foods are whole grains, beans and legumes. Also, don't be afraid of tofu and tempeh - they fill the belly with goodness! Some of my fave grains: farro, quinoa, lentils, barley...

Check them out you won't regret it. Filling veggie foods are whole grains, beans, and legumes. Some of my faves are: farro, quinoa, lentils, barley, millet, tofu, and tempeh. vegetarian stirfry with fried brown rice, homemade veggie pizza fridays, celery and carrot soup, fried eggplant parmesean, the list goes on...I will think of some more and send recipes your way
